The Story

What is Spiced Cyser?

Spiced Cyser is a festive twist on traditional cyser—a blend of apple cider and honey mead—with an added array of celebratory spices and botanicals.

This variety, known as metheglin, features cinnamon, cardamom, ginger, black tea and lemon rind to evoke a sense of joy and cheer. Such spiced meads have long been associated with special occasions, from solstice gatherings to winter feasts, for their comforting and complex flavours.

What We Made

To celebrate the season, we reimagined our Autumn Cyser 2024 into the Spiced Cyser 2024. Using the same crisp and tart base made from hand-pressed crabapples and Bramley apples, we infused it with a medley of warming spices and citrus. Cinnamon and cardamom bring nostalgic holiday warmth, ginger adds a touch of zest, black tea offers a gentle tannic depth and lemon rind lifts the flavour with bright citrusy notes.

The result is a semi-dry mead perfect for festive moments—whether it’s a winter solstice gathering, a holiday party, or simply curling up by the fire on a chilly evening.

Production

Fermentation Process

The cyser underwent a primary fermentation using Lalvin EC-1118 wine yeast to preserve the vibrant apple flavours, followed by a secondary fermentation to refine its balance. In the final week of the secondary fermentation, we introduced the spices—cinnamon, cardamom, ginger, black tea, and lemon rind—to ensure their flavours infused seamlessly without overpowering the base.
